Yes rehydrate. It depends on what kind of yeast it is. US-05 or 04 are as good as any clean
fermenting strain. I'm sure if you did a search for information on dry yeast, hundreds of

I believe 1 lb of carapils is too much. I typically see 1/4 to 1/2 lb in a brew.Agree, it will

I would shoot for something around 5% and would prob do a 5 gal batch. Pitch plenty of yeast,
ferment at 68 and use Whirfloc.
