My guess is that while 8 weeks in primary isn't excessively long enough to create autolysis, it
is long enough (especially if there is a lot of headspace) to allow oxidation and/or infection
    once it h...

When the OP describes a "cidery" off-flavor, I'm wondering if he means the vinegar-like flavor
one gets from an Acetobacter infection. You may want to replace things like siphon hoses,
    fermenter bucket...

week 4. If you are controlling your ferment temps with temp controlled chamber then there's no

I started brewing I learned real quick what off fermentation flavors tasted like. I brewed

Not sure what 'sick'sweet meansActually I just thought of a description of the flavor. It's not
far off from what off fermentation flavors develop when the temp is too high. It's pretty close
    to that ...

Could be infected if you're using old hoses. Clean everything thoroughly. You may not need to
throw everything out though. Boil your hoses, and clean and soak all your buckets, IC, siphon
    etc with PBW...

Not sure what 'sick'sweet meansI know I'm sorry. Unfortunately I don't know how to describe the
    taste.

This was an extract batch. But I've had it happen to mashes too. I have used the same water and
had batches come out fine. It's puzzling. Sent from my iPhone using Home Brew

Just tasted it again and it might have a bit of metallic to the taste. The pumpkin ale I made
doesn't have it. I'm starting to think it is equipment. I might just throw all my buckets out
    and hoses. G...
