I've seen different style poppets depending on the brand of keg. If the circle is off, maybe
you need a different kind of poppet entirely. Keg lube on the various o-rings also helps.

Not sure why they recommend 200. Books, extract kits I used to brew (I liked the ones from
Austin Homebrew Supply), and other sources recommended the 150-160 range. I'd stick with that

I wouldn't worry about it. The CO2 blanket on top of the beer as a result of fermentation will
protect it to a degree. Some breweries do completely open fermentations and don't have issues.

A steam beer is a style that uses lager yeasts and ale temps, so I wouldn't worry about it. I

If you're using ale yeast, I'd think it would be fine at 75 at this point. Like WileE said,
