I am going to try making an oatmeal stout. I see that some recipes call for a british ale yeast, and some call for irish ale yeast.

I am thinking Irish, but I wanted to know what the difference b/t the 2 strains is, or which is preferable for a stout.

Thanks!

This depends on what kind of stout you are producing. If you want something dry and bitter, probably Irish Ale. If you want something sweeter, maybe English.

I've just recently gotten a handle on grain flavorings, and haven't yet started mucking with different yeast strains (but I did buy some Irish Ale yeast for my upcoming coffee stout).

Anyway, I did a google search for "flavor profiles for ale yeasts" and found this reference which might be helpful:

I am going to give the irish ale yeast a try for this one.
