Yeast?

I am really confused but wouldnt using yeast in a soda cause the soda to become more of a alchoholic beverage due to the yeast eating up all the sugars?

The trick is to stop fermentation after the yeast has produced enough CO2 for you.
One of the best ways IMO is to keep the soda cold (<40°F) until you drink it. That will make the yeast activity stop.

the trick is to only let them eat enough to produce some co2 (and a very small amount of alcohol.) then put them in the fridge to stop fermentation.

you have to have the yeast. thats the part that gives you bubbles.
the yeast eat the sugars and turn them into CO2 and alcohol. so you'll get some alcohol, but very very little.
unless you're going to keg, you have to have the yeast

Correct! Coca cola, Pepsi, etc. do not use yeast.
