Default This is me making a 5gallon batch of ginger soda

I just started a brew of ginger soda. In the pot theres 2lb of ginger, 3lbs of pineapple, 2 gallons of water, and soon to be 5 lbs of PCSugar. Anything I left out?

How did your ginger soda turn out? Did It taste like a flavoured ginger ale or have that strong ginger beer flavour?

jinx - It tastes sweet and the ginger flavour lingers for a bit. Not dry like ginger ale, but not strong ginger beer flavor like reed's either. Have you ever tried "Ginger Ale by Bruce Cost"? If so, it tastes similar to it.

I would like it to taste a little more earthy (right term?) but I haven't discovered that ingredient yet.
Anyway, the ginger soda is currently in the keg hooked up to the CO2 building up some bubbles. Hope to get it extra fizzy by thursday.
