Default Carbonating sarsasparilla

If I mix the extract and put it in a keg,is it okay to carb with yeast or will it over ferment and turn alcoholic?It is a hombrew extract soda kit. I have a CO2 tank if that would be better.
I would just need a cool place to carbonate.

If you carbonate with yeast, you have to get it to the right amount of fizziness and then get it cold and keep it cold. The yeast will continue to work, but very, very slow. So there is a chance it will get over carbonated. IMO, using the CO2 to force carbonate is a vastly superior method (given you already have the equipment.)

I like my soda in the mid 30s, and at about 35 psi. You need really long lines- like 25 feet- for such a high psi.
