Default Advice on Ginger Ale Recipe

I recently got a big order from NB and impulsively threw in a little bottle of "Old Fashioned Ginger Ale Extract." Says the full bottle makes 4 gallons. I want to keg a five gallon batch of it for the holidays.

It calls for 2 cups of sugar per gallon- I'm planning on doing 5 cups of brown sugar and 6 lbs of water-white clover honey. I was thinking I could get the requisite ginger for five gallons (since the extract is only enough for 4 gallons, and I want this "gingery") but dicing up a couple of ginger roots and steeping them in the mixture prior to kegging.

Anybody have any input on this idea, particularly as far as how much ginger to use?

I'd do no more than 1 cup of brown sugar and 1 cup of honey in a ginger. Those flavors will overpower. Just short batch and do 4 gallons. You can adjust on the next backchat.
