Thanks for the information, i endorse in long-windedness so I can't fault you there. I never though about shade growing, great idea. I saw a few other posts and i figured i may have a little too much crystal malt. It doesn't smell horrid if i hover over the airlock. What can i expect with it as far as flavor with it being the way it is? Too sweet? or too concentrated of a particular flavor? It being my first batch, i may not even notice it being too off, but i wanted to give some to friends and family as well.

EEk. I was worried about that. Is there anything i could do at this point to compensate for the excess malt? I have read that some people leave beer in the primary longer to impart a more "yeasty" flavor in their brew, especially with heffenweisens. Would that be a good thing or a bad thing to do, or would it not matter either way? Any other suggestions other than the ones you have given that i appreciate greatly?

I've also given some thought to growing hops. We have 40 acres in N GA (Dahlonega) that is very hilly and wooded. I have also considered grapes since there are so many wineries popping up in N GA. Maybe I should focus on wine instead of beer and open a winery

good to know, researched a bit and found that SE used to be a hop region but the heat and humidity created too much mildew and pests. Same with silk, so know we have mulberry bushes! I will create a bier garden dedicated to the hoppy hopeful hordes right next to my muscadine vine.

if you do the wine, how about an apiary? ship some down to the 912 for me mead!

Just to add, I use to live in S. Georgia and unless you live on or right by a river, your soil is more than likely extremely sandy and acidic. I recommend liming it over the winter, and bringing in some dirt in the area you want to grow and disk the soils together.

I bought hallertau, cascade, brewers gold, tettenang and fuggles. Only the Brewer's gold survived in my Florida garden. If you're as far south as me (Clearwater) go for the gold.

hell yeah, I almost forgot again this year! I remembered this post and reread just in time! I have the perfect spot already to go, thanks to some advice here, I cleaned some bricks (a couple hundred) and the lime mortar has been there for about three years, I am tilling in some soil and mulch in a large area with some time release fertalizer, as soon as those babies show up we are in the game!
