Default Is late May too late to cut bines all the way back and start fresh?

I have been meaning to build my hop trellis for 3 years now and I am just getting to it today. Some of the bines are 3+ feet. Is it is too late (May 25) to cut them back and get good growth? Can I train the bines that are there? I want to cut them down to the ground and let them grow for a week and choose the strongest looking ones. What do you think?

Just carefully twine the 2-3 strongest bines per plant around your trellis. Commercial growers cut back the bines to get more uniform growth and harvest time, but there's no need for us to do so.

You can train the bines that are there, which is what I would recomend.

If you had to cut them, I think you could. A couple weeks ago, we had a hail storm and it broke every tip off my 3ft bines (1 week after I cut back all the other growth). I decided to trim it all down and start fresh with the new growth and it is already 6ft now.
