Default adjusting ratio in beersmith?

how do you adjust the ratio? Jamil says use 1 instead of 1.25 for this one recepie..... I just did it at 1.25 as normal, but I figure i should learn...

Choose a mash (under mash profile) and then open the step (double click) and you can change the ratio for that step.
