I've done both batches in a 3 gallon BB carboy. The first time I was worried about headroom so I did a 2 gallon batch and had almost no krausen. Second batch I did 3 gallons in a 3 gallon BB (right up to just below the neck) with zero problems.

Hey all! Noob to homebrew and takin stab at cider. I made mine with a lil less than a gallon of motts with a hole cut in the cap for the grommet and airlock : ) I added a frozen can of apple, mango, passion, 1/2 cup of sugar melted down. Gave it a good shake added hydrated 1/4 pack of Windsor dry yeast, gave it a lil shake and put the airlock on. I was gonna bottle carb and test with a pet bottle in a few days. OG was 1.070 and shooting for 1.020. Any comments or concerns? It's the one on the left. On the right is a variant of Edworts Apfelwein that I'm gonna leave for a few more months. : ) I wanted something sooner (and something sweeter for the swmbo). Did I leave enough headspace in the 5 day one?

Edit: I should probably mention after bottle carbing I plan to pasteurize. Is there any reason to prime or will there be enough to carb? Any feedback on stove top vs dishwasher pasteurize? Thanks everyone...one batch of beer just finishing bottle conditioning and I'm workin on batch number 2 of hard cider....officially EXTREMELY addicted!! Thankfully i have ya'll to help me!

Finished first batch. Very tasty, will do again.
Decided to go with the dishwasher pasteurization route. Out of 36 bottles I had two explode in the dishwasher. Then placed all in fridge after they cooled to room temp — placed one in the basement, it's been there for a week and has not exploded, so it seems my washer got hot enough to stop fermentation.

Also, I had great carbonation using the soda bottle trick:
Buy two plastic 24oz bottles, leave one unopened and fill the other with cider. When they feel the same it's bottle time.

I'll be adding ginger next time.

Put on my first batch of this... just a one gallon. Grated a little bit of ginger and threw it in as well. Within about an hour or two, I had activity in the airlock. Looking forward to this one. OG of about 1.075 Thanks!

Do not use!! Killed my poor little Yeasties... Oh well prepping another one as we speak this time with a gallon of AJ and more cinnamon to up the gravity a bit

Started at 1.062 SG, now at 1.022 yielding 5% after 4 days. Now I added a 1/2 cup brown sugar to this recipe for one gallon in primary and see a lot of floaters and a rich bottom. I've never fermented with brown sugar so is this typical?
