So I was Hawaii and I picked up 3# of this nice dark looking raw
Macadamia Honey...

Anybody use it before?

Nope but it sounds delicious. What are you planning on crafting with it?

Sounds awesome. I'd say make a show mead and show off that unique honey.

dunno about a show mead. if it's a honey that's hard to obtain/find, then maybe something that's a bit more guaranteed to give a result, like a medium traditional.

Show meads can take forever and there's no guarantee of a drinkable or reasonable result.

Still, it's your honey/choice.....

I think fatbloke has a point, maybe go simple and first see what flavors/body/aromas you get and then expand to other recipes.
