Well, this thread inspired us - put on about 7 gallons of this yesterday afternoon.

Well, we really screwed with the recipe, so I guess "7 gallons of something sorta like this, we hope"!

The whole brew room smells like banana bread. Yum! Too bad I'm allergic to wheat, I make awesome banana bread, and now we're craving it something FIERCE.

Ok, here is our banana wine, 1 week after starting.

We We sliced the bananas up and boiled them in the water, mashing them as we went - hate using the bags!

We put the raisins in primary, along with a few generous scoops of the banana mush, before straining the hot banana liquid over it. It's been fermenting like that for a week.

Today, we juiced the raisins and banana mush from primary, added the juice back to the fermenting liquid, and racked it all over to a carboy. It's yeasty, but damn.. it tastes GOOD! So excited to try the final product!

Wow not sure what the heck happened but im racking one of the two batches I made and it has geletinized all the yeast pitched is settled right on top in rafts of jelly? Lol haven't checked the second batch. This ever happen to anyone before?

Homer, how did bottling that turn out? I'm in the same boat as you.....35 empty wine bottles and no corker yet. My banana wine currently is at 14 months (center in pic) and I need the jug for other alcoholic inventions.

I'm on day six and I have these flakes floating around, and settling above my foam line. They don't look to me like a bac or mold.... But?

To me they look like.... Crunched pieces of flat pasta crunched into tiny flakes, cooked al dente...

It's only a half gallon batch so it's no biggie ( of course it's a big deal) if its bad. But I needs the knowledge.
