Here's a photo of the tea as it was steeping. I strained this in 3 portions through a small french press and into the empty, sanitized bottling bucket. Then I racked on top of it and bottled 43.5 bottles.

I think this is one brew that I'm going to actually leave for 2 weeks in the bottle for the first taste.

I just brewed this lst tuesday. It was also my 1st AG brew. Stupid easy really. After the addition of the honey my Gravity reading was 1.082. Signs of fermenting started 2 days later. Looks to be slowing down a lot, so I plan to check the gravity tonight, and then again in a few days. Since so many have made this, would it be ready to drink in early Jan? I plan on kegging 3 gallons or so and bottling the rest.

Brewed this last weekend for the 3rd consecutive year, but did change things up a bit. We roasted 3 pounds of acorn squash and put it in the mash. Then we boiled as normal. 2 gallons went into the fermenter, 2.5 gallons went into a pumpkin! So we'll have a pumpkin beer party in October, but 2 gallons will receive the spiced treatment at bottling for christmas. Also, our friend drew a sweet skull on the pumpkin.

Just made the tea and lettin it chill now, sanitized some bombers and drinking a cold IPA!! My kitchen smells like Christmas!! I love it!!

So after i mixed the tea in i had a small taster and it was amazing!! Thank you for this recipe!!

8 days in the bottle and i just couldnt wait! Its almost fully carbed up, nice off white head and beautiful ruby highlights when i hold it up to the light! Its got a good hop bite that quickly fades into a sweet cinnamon and vanilla on the back of the tounge. That should fade a bit with time but this beer will be a grand slam with the friends and fam come Christmas eve!!

I brewed this 9/15 and hit 1.071 and 1.082 OG. I had to do two batches. I wanted ten gallons made so I could bottle and hand out 6 packs for Christmas. Having 10 gallon coolers I couldn't do a single double batch.

I kegged and put them on gas after two weeks in primary. I got 1.007 FG on both. Today I tried the lower OG batch and its really smooth. The vanilla is a little strong for me but not by much. From what others have said it looks like this will mellow over time. Carbonation was low but I turned up the gas.
