Default All-Grain - "Shore Leave" IPA Wood Aged

Yeast: Safe Ale S-05
Yeast Starter: No
Batch Size (Gallons): 5
Original Gravity: 1.061
Final Gravity: 1.018
IBU: 61
Boiling Time (Minutes): 60
Color: 11.3
Primary Fermentation (# of Days & Temp): 10 62 deg
Secondary Fermentation (# of Days & Temp): 45 62
Tasting Notes: Very strong burbon notes, not too dry. Needs more hops. GOOD BREW

5.00 lb Munich Malt - 10L (10.0 SRM) Grain
5.00 lb Pale Malt (2 Row) US (2.0 SRM) Grain
1.00 lb Caramel/Crystal Malt - 40L (40.0 SRM) Grain
0.50 lb Cara-Pils/Dextrine (2.0 SRM) Grain

60 min 1.00 oz Simcoe [13.00 %] (60 min) Hops
30 min 1.00 oz Goldings, East Kent [5.00 %] (30 min) Hops
15 min 0.50 oz Goldings, East Kent [5.00 %] (15 min) Hops
5 min 0.50 oz Goldings, East Kent [5.00 %] (5 min) Hops

Secondary racked onto 4 oz of medium toast oak chips for 45 days.

This is a bit on the light side OG wise for an IPA. I wanted a brew to savor and enjoy. Hop notes are very light with this. If I brew it again, I would kick in alot more Kent hops. I used the Simicoe as they were a left over from previous brew. Knowing that IPA's were likely shipped in wooden kegs, I thought it would be interesting to try a wood aged IPA. Missed on the hops, so I think another ounce at 45 minutes would get it right. Pics to follow.
