brewed a version of this last night (extract), an "Imperial" version in an attempt to get closer to the Avery Rumpkin. From the recipe I used an additional pound of DME, one pound of brown sugar, one pound of pure maple syrup, a full pound of biscuit malt and a half pound of wheat. I doubled the hops to balance it (used a late addition for more aromatics vs. bittering). The pumpkin was baked for an hour with a light layer of molasses and spice on top. I used the Trappist Ale yeast (WL500) in a 3-liter starter. The spice tea consists of 12 oz of black rum with two tablespoons of pumpkin pie spice; it is sitting on the side for the secondary. OG came in at 1.084 It took off right away and is going like crazy. I hope my simple sugars are not too much for the yeast. I was going to add them later, but read that as long as you keep them to 20% or less of total fermentables it should be okay.

Very interesting convection currents in the wort during cooling. .. .

Brewed yesterday. Used the big can 6# 10 oz baked for 45 mins.. next time I would go for the full hour

Wanted to share some pics of this brew. Needs 2 more weeks to condition but mighty tasty now.

Brewed on labor day and sat in primary for 10 days then another 14 in secondary.

Needs to be started the 1st of August.

Here is a picture of my Lady Bug Pumpkin Ale....pretty tasty. It's been in bottle for about 1 month now and things are falling into place and it is delicious. Will try to hit a 1.016 FG next time (this one is 1.020) and may be a touch less spices. I'll see how they fade over time.

Ok brewed this tonight and did a full boil. Should have just done the all grain version as I have a mash tun built and everything else, but I had already ordered the extract stuff. My OG came in right on. I just needed to add a little top off water only because I hadn't measured how much I had going into the boil, but it's done. My friend Tmooka (on this forum) and I had a great time brewing this tonight. All the while trying to kill my keg of Abita amber so I can make room for the 5 brews I have in the pipeline.

I steeped the grains for 30 minutes in a bag as per the recipe, and I added the pumpkin to the boil after baking on a sheet pan for 1.5 hours at 350. It was completely suspended in the wort and I didn't even try filtering it out. I am kicking myself for not doing that, because even though fermentation has kicked off in only a few hours, it seems as though almost half of my 6.5 gallons is pumpkin sediment.
