Toast 7 cans of pumpkin puree with a little brown sugar in the oven at 350 F for about 20 minutes, then add to the mash

Added 4 tsp Pumpkin Pie Spice and 1/2 tsp vanilla extract to secondary

Is that a typo or did you really adding 7 cans of pumpkin to this recipe? If so What size cans were they?

Was thinking the same thing. Another recipe I looked at called for 60 oz of pumpkin.

Yeah, I added 7 of the big cans. I think it was close to 7 pounds. The latest one that I did has about 6 pounds of roasted pumpkin meat that I cooked myself from fresh picked pumpkins. Turns out really nice, but the pumpkin adds heaps of starch for coversion in the mash. The beer will be really alcoholic from the simple sugars created from the pumpkin starches.
