Boiling Time (Minutes): 65
Primary Fermentation (# of Days & Temp): 21 days @ 77F
Secondary Fermentation (# of Days & Temp): n/a
Tasting Notes: Balanced, Slightly fruity, Belgian Style Wit

Pre Boil

4oz Crystal 20L

Boil

3.3# Munton's Malt Wheat LME (65mins)
3.3# Briess Bavarian Wheat LME (65mins)

1oz Liberty Hop Pellets A.A. 4.0% (60mins)

1# Gunter's Orange Blossom Honey (20mins)

.5oz Tetnanger Hop Pellets AA 4.4% (10mins)
8oz POM Pomegranate Juice (10mins)
.5oz Whole Corriander Seed (10mins)

.5 oz Tetnanger Hop Pellets AA 4.4% (5mins)
.5 oz Whole Corriander Seed (5mins)
Navel Orange Zest - 1 orange (5mins)

1oz elderflower, dried (flameout)
.5oz chamomeil tea (flameout)

Yeast

White Labs Belgian Wit II WLP 410, pitched at 77F



Ferment in primary for 21 days, bottle with 5oz priming sugar, bottle condition for 4 weeks.

I have to say, it was really enjoyable. Had the nice belgian funk I was looking for, and the fruit didn't overpower. I think the chamomile really added a nice touch to the finish.

Did you leave the elderflower/chamomile in the primary or steep it after the boil? If steeping, how long would you recommend steeping it for?

I added them at flameout and left them in while cooling prior to racking.
