Default Monochrome Biere De Garde - Plain, Blackberry, and Bourbon Cherry

Recipe Type: All Grain
Yeast: Wyeast Farmhouse
Yeast Starter: None
Batch Size (Gallons): 5
Original Gravity: 1.075
Final Gravity: 1.01
IBU: 35.8
Boiling Time (Minutes): 90
Primary Fermentation (# of Days & Temp): 5 days at 68
Additional Fermentation: 7 days at 70 with divide, see below
Secondary Fermentation (# of Days & Temp): 5 days at 70
Tasting Notes: N/A

Recipe
Malts 10.0 lbs of Belgium Pilsen
2.5 lbs of Munich
0.3 lbs of Cara20
0.1 lbs of Belgian Special B
0.15 lbs of Debittered Black Malt

Hops 1.0 oz of East Kent Golding @ 90 Mins
0.5 oz of East Kent Golding @ 60 Mins

Other Teaspoon Irish Moss @ 15 Mins

Yeast Added two smack packs of Farmhouse Ale from Wyeast @ 66F

Mash Mashed 4.5 Gals @ 148 (158 when poured in)
At 15 mins add 1 gal @ 200, avg temp up to 152
Mash At 30 mins, temperature is 149
At 60 mins, temperature is 148
At 75 mins, added 1/2 gal of boiling water
At 90 mins, mashed out

Sparge Sparged 4 gals at 170F

Boil Collected 6.5 gallons
90 min boil

Fermentation Fermented in 5 gal carboy, about 4.5 gals
Pitched yeast @ 66F
Fermented for 5 days at 68F
Fermented for 5 days at 70F
Secondary - Broke into 3 groups
1 gallon went on blackberries crushed for 7 days
1 gallon went on bourbon soaked cherries for 7 days
Rest went into bucket for 7 days

Kegging

Here are two shots.

Turned out pretty awesome. Good ABV and nice attenuation. It has a very nice Belgian farmhouse after taste. A little bit sweeter than I would have liked up front.

Overall, it is very solid. Will improve on it now.
