Default Extract - Dark Tidings - Belgian Dubble

Recipe Type: All Grain
Yeast: Wyeast 3522
Yeast Starter: Pitched on Cake
Batch Size (Gallons): 5
Original Gravity: 1.07
Final Gravity: 1.013
IBU: 19.7
Boiling Time (Minutes): 60
Color: 27 SRM
Primary Fermentation (# of Days & Temp): 14 days @ 65\'F
Secondary Fermentation (# of Days & Temp): 21 days in keg @ 75\'F
Tasting Notes: Silky smooth, nice peppery notes and subtle roasted undertones

On account of deadly heatwave and unpredictable daily downpours I have been doing some extract brewing this summer to keep the brewday reasonable short. I threw together this recipe in order to reuse a yeast cake from a Belgian Wit I had brewed for a July 4th BBQ. For some reason I prefer my Belgians to be really dark hence the black color. Delicious beer though, very pleased. Not particularly to style.

I fermented this on the cold side (65'F) so the yeast flavors are less pronounced than they could be.
