Default All-Grain - Sunny Side Wheat

Recipe Type: All Grain
Yeast: US-05
Yeast Starter: NO
Additional Yeast or Yeast Starter: NO
Batch Size (Gallons): 11
Original Gravity: 1.052
Final Gravity: ~1.010
IBU: 30.0
Boiling Time (Minutes): 60
Color: 5
Primary Fermentation (# of Days & Temp): 14
Additional Fermentation: NONE
Tasting Notes: Great session beer, goes great with any food: pasta, salads, burgers, Mexican, etc.



"Sunny Side Wheat and Pasta Fresca"


BEER: Sunny Side Wheat

12 lbs. (5.44 kg) 2-row Pale
8 lbs. (3.63 kg) Wheat Malt
1 lb. (0.45 kg) Munich
0.5 lb. (0.22 kg) Crystal 40L

1.25 oz. (35 g) Cascade 60 min
1.25 oz. (35 g) Willamette 60 min
1 oz. (28 g) Cascade 10 min
1 oz. (28 g) Willamette 10 min

1 tsp. Irish Moss
M*A*S*H: 152F (66*C), 60 min.
Yeast: US-05 (Kolsch Yeast works well in this beer too)

(Serve with an orange slice).



FOOD: Pasta Fresca

12 oz. vermicelli pasta
6 oz. extra virgin olive oil
1-2 cloves garlic (either fresh or roasted), minced
3-4 roma tomatoes, diced
1/4 red onion, diced
1/4 lemon juice
1/4 cup Calamata olives
1/4 cup freshly grated parmesan cheese
1 oz. fresh basil
1 oz. fresh oregano
1 oz. fresh parsley

(Serve cold.)


Note: This beer is not only a great session beer, but it also goes great with almost any food: pasta, salads, burgers, Mexican, etc.

what would happen if you just used wheat berries instead of wheat MALT???

Wow.. this is my next recipe for sure!!! I've never brewed with Wheat before.. am I screwed without rice hulls?

I am also wondering about the rice hulls. I have heard that if you do a nice protein rest at 117-122 that it makes a perfectly workable mash, but i dont know if i believe it either.

I don't use rice hulls in this beer, I simply don't need them. I mash this beer ~152F for 60 min.
But I guess the need (or lack of it) for rice hulls may depend on the shape of your MLT and the type of your lauter filter. I use a rectangular Coleman cooler for an MLT and a manifold filter made out of CPCV pipe.
