Yeast: Nottingham
Batch Size (Gallons): 5.25
Original Gravity: 1.064
Final Gravity: 1.014
IBU: 18.6
Boiling Time (Minutes): 75
Color: 5.6
Primary Fermentation (# of Days & Temp): 5 days @ 54 ,let raise to room temps over 1 wk
Secondary Fermentation (# of Days & Temp): 14days @ 34f
Tasting Notes: Orange blossom honey aroma/taste

35g. Hallertauer 60 min.(3.1 AA) >> adjust as needed
14g. Hallertauer 15 min.

mash: 154f Time: 75
1lb Honey @ 5mins after flameout

Ferment @58f for 5days , let raise to room temps over 1 wk
transfer to secondary and lager for 2 wks.

Looks really interesting. Can you tell me something about your fermentation/temp schedule - it looks like a lager schedule using ale yeast? Thanks!

I like to ferment Nottingham cold to get a really clean/crisp profile and avoid the banana aroma that can happen at higher temps.

Just bottled this last night. The hydrometer sample tasted great!
