Lemon-Lime Hefe Weizen

After brewing this beer several times and having other people brew it as well....I can tell you this will be one of your favorite recipes!

All Grain

  • 6.25lbs Pale Malt (2 Row)
  • 4lbs White Wheat Malt
  • 1lb Vienna Malt
  • ****Mash 158 for 45 minutes****
  • 0.25 Motueka Hops at 60 Minutes
  • 0.25 Sorachi Ace 20 minutes
  • 0.25 Motueka Hops 20 minutes
  • 0.25 Sorachi Ace 7 Minutes
  • 0.50 Lime Zest 5 Minutes
  • White Labs Hefeweizen IV Ale Yeast
  • ****Start Vigorous Fermentation****
  • After Vigorous Fermentation subsides, add 1.75L Simply Limeade
  • ****Ferment for a minimum of 3 weeks****

Extract
  • 7lbs 12.6 Ounces of Wheat Liquid Extract
  • 10.7 Ounces of Pale Liquid Extract
  • Follow rest of All Grain Recipe
This beer is a great every day drinker, I recommend a frosty mug and a lime garnish!

I just zested 10 small limes and I only got .85 oz. I'll pick up two more in the morning so I can have the whole oz. needed for a double batch.

I was trying to figure out what to do with all the limes so I made my own limeade!!! I used 1.5C of corn sugar to a gallon of lime juice/water/lime rhine. I'm gonna compare SG and flavor with the Simply Limeade. I'll probably end up doin a batch with the simply and a batch with the home made. It's supposed to be extremely warm (0-15 above zero) so I'm planning double brew day tomorrow.....

Alrighty! We had a chinook blow in so I did a double brew day. Yeast is pitched so now I have about 24 hours to decide what to do with both. One will be simply limeade, the other will be.......

1) simply grapefruit
2) leave it alone
3) simply raspberry lemonade

What do you think?

BTW, I'm stopping by Lowe's for more blow-off tube which I will rig up in about 3 hours when my kids get home from school.

A proper pour with some good head....L-L-H, thanks again, slim.

Man am I glad I did 6 gal of Lemon lime and 6 of grapefruit....

I should probably stop posting in this thread.....I don't want to be a troll or a stalker....it's just so good..

Resting in the carboy. My efficiency was WAY high for some reason so my OG was 1.069! I didn't make a starter this time and I'm slightly worried, but I'll keep my fingers crossed that it takes off in a day or so. I'll be ready with another vial of yeast, if needed, just in case the yeast lose the battle against the high OG. Looking forward to tasting this in late April/May.

Trust Slim's comment about the Limeaide... That stuff is explosive and the yeasties LOVE it. My kreusen went from about 1in to 6+in and still going...

It's officially bottled after a 22 day primary!

I'm really looking forward to tasting a fully carbed and cold one in 2-3 weeks. The taste is very smooth and the lime is there, but not in your face. I think the carbonation will really get the crispness on the palate. The smoothness along with neat 7% alcohol is going to be dangerous! I'll post more notes once it's "ready". Thanks.
