Default Simcoe/Centennial Wyeast 1007 IPA

Recipe Type: All Grain
Yeast: Wyeast 1007 - German Ale
Yeast Starter: 200ml
Batch Size (Gallons): 5.5
Original Gravity: 1.065
Final Gravity: 1.012
IBU: 70 IBU
Boiling Time (Minutes): 60 min
Color: ~7 srm
Primary Fermentation (# of Days & Temp): 5 weeks @ 60 deg
Tasting Notes: Piney/Citrus

This beer turned out great. The Simcoe/Centennial combo provided piney/grapefruit notes and an overall pleasant bitterness. The German Ale Yeast ferments pretty clean, but gives a subtle fruitiness. The beer definitely benefits from an extra week of cold conditioning in the fridge after bottling. Enjoy!

.75 lbs CaraRed

.5 oz Magnum 13% @ 60 min

.25 oz Simcoe 13%
.25 oz Centennial 9.5% @ 20 Min

.25 oz Simcoe 13%
.25 oz Centennial 9.5% @ 15 Min
1 tsp Irish Moss

.25 oz Simcoe 13%
.25 oz Centennial 9.5% @ 10 Min

.25 oz Simcoe 13%
.25 oz Centennial 9.5% @ 5 Min

.5 oz Simcoe 13%
.5 oz Centennial 9.5% Whirlpool

Dry Hop with 1 oz of Simcoe and 1 oz of Centennial one week before
bottling.
