Default Multiple - Overkill Cascadian Dark Ale (all-cascade)

Recipe Type: All Grain
Yeast: Wyeast 1272 - American Ale II
Yeast Starter: YES
Additional Yeast or Yeast Starter: Step-up
Batch Size (Gallons): 5
Original Gravity: 1.082
Final Gravity: 1.022
IBU: 93
Boiling Time (Minutes): 60
Color: 37.5
Primary Fermentation (# of Days & Temp): 14
Tasting Notes: Even hop bitterness with an explosion of hop flavor/aroma; caramel and roasted tones

So after putting together an outdoor rig from new toys I got for Christmas I decided the first brew should be over-the-top. I had a few bags of Cascade in the freezer and figured I should use the entire contents of one. The smalled one was 15.8oz

This beer, due to the massive amount of late additions, is not powerfully/astrigently bitter but is instead very balanced and smooth.... but don't let that fool you, it's still incredibly hoppy. Carafa Special II really did a good job of making it crazy dark and adding mild roastiness but without making it taste like an incredibly hoppy stout.

If you have the means (read: hops) to do this give it a shot. You won't be sorry. I'm currently drinking some now that's only about 18 days old and it's already amazing.

3.5oz Cascade (6.9%) -- 5min
4.0oz Cascade (6.9%) -- flame-out
2.0oz Cascade (6.9%) -- Dry-hop 7 days


MASH SCHEDULE
20qt 165F strike water (154*F sacc rest)
16qt 168F sparge water (no mash-out)
