I was trying to do a few things with this brew. 1) Make something the wife would enjoy, 2) make something that tasted different, and 3) make something right on the IPA-IIPA borderline. It took a bit of fiddling with the amounts of specialty grains to get the taste right, and a bit of chomping on barley at the LHBS to pick 'em out.
Grain:
5.0 lb. Maris Otter 3L (83%)
8.0 oz. Special Roast 50L (8%)
8.0 oz. Carastan 30-37L (8%)
Hops (leaf):
1 oz. Willamette, 5.6% AA, First Wort
1 oz. Cascade, 5.7% AA, First Wort
1 oz. Willamette, 5.6% AA, 0 min.
1 oz. Cascade, 5.7% AA, 0 min.
Mashed 1 h at 152 F; fermented for 12 days at 68 F with S-04 in a Mr. Beer. Primed with 1/3 c. dextrose; looks like about 7.4% ABV.
Starts out with a sort of mango-grapefruit taste, but that quickly gives way to a mild roastiness and a clean hop bitterness.
