Mead Lane Rye IPA
 
Ingredients:
8 lbs Pale Malt (2 Row) (1.4 SRM) 58.72 %
2 lbs 8.0 oz Rye Malt (3.0 SRM) 18.35 %
1 lbs 8.0 oz Munich Malt (10.0 SRM) 11.01 %
8.0 oz Carapils/Dextrin (1.5 SRM) 3.67 %
8.0 oz Carared (20.0 SRM) 3.67 %
2.0 oz Chocolate Malt, Pale (225.0 SRM) 0.92 %
8.0 oz Honey (1.0 SRM) 3.67 %

0.50 oz Williamette [6.40 %] (60 min) (FWH) 9.6 IBU
0.70 oz Warrior [15.00 %] (60 min) 46.5 IBU
0.50 oz Simcoe [12.90 %] (20 min) 8.7 IBU
1.00 oz Williamette [6.40 %] (10 min) 5.1 IBU
1.00 oz Williamette [6.40 %] (5 min) 4.3 IBU
1.00 oz Simcoe [12.90 %] (DH 14 days)
1.00 oz Columbus [15.80 %] (DH 14 days)

Dennys Favorite 50 (Wyeast Labs #2450PC) or
SafAle American Ale (DCL Yeast #S-05)

Mash:
Dough In @ 122F
Ramp to 140F for 40 minutes.
Ramp to 158F for 20 minutes.
Ramp to 168F for 10 minutes.
Sparge with 170F water.

Notes:
Added Chocolate just before sparge.
Based on 75% efficiency with RIMS mash.
This is a keeper. Probably the best IPA I've made. The hops flavor is slightly citrusy but not grapefruity. Little bit of maltiness, with a dry finish. I added the honey to primary because I ended up with more than 5 gallons and the SG needed a little boost.
I made 10 gallons of this stuff. I have only tasted the keg with Denny's 50 yeast. The carboy with S-05 will get kegged next week and won't be tasted for a month or two. I will keep you posted.

Hmmmm... the 2nd keg was even better. I prefer the S-05 over the Denny's 50. Who would have thunk it. The 2nd keg was smoother and slightly maltier than the 1st. Might have something do do with aging longer...
