Default All-Grain - IIPA partigyle

Recipe Type: All Grain
Yeast: notty
Yeast Starter: nope
Batch Size (Gallons): 5 gal
Original Gravity: 1.078
Final Gravity: 1.012
IBU: 94
Boiling Time (Minutes): 90
Color: 18.2
Primary Fermentation (# of Days & Temp): 21 days around 68*
Additional Fermentation: none
Secondary Fermentation (# of Days & Temp): 14 days 68*
Tasting Notes: fantastic smooth bitterness, with a great hop aroma and strong malt backbone.

20 lb pilsen malt
5 lb munich malt
1 lb cara pils/dextrine
1 lb crystal 15 L
10 oz Crystal 60 L
8 oz Crystal 120L


Mash w/ 9 gal @ 152 for 60 min. Collected 7.5 gal of 1.110 wort

batch sparge (second runnings, 5.5 gal of 1.030 wort.

not sure the quantities (cause i didn't write it down), but i swapped quart for quart to get to starting gravities of : 1.068 for the big beer and 1.040 for the small

the small beer ended up sucking, so i'll completely disregard it from here.

the big beer was hopped as follows:

.5 oz summit 16.3% @ 90 min
.5 oz summit @ 60 min
.5 oz centennial 8% @ 45 min
.5 oz centennial @ 30 min
.5 oz cascade 6.3% @ 20 min
.5 oz cascade 6.3% @ 15 min
.5 oz cascade 6.3% @ 10 min
.5 oz cascade 6.3% @ 0 min
1.5 oz amarillo 7.3% dry hopped for 14 days.

pitched 1 8 oz mason jar of washed Notty yeast.


I brewed an IIPA just because i had the above hops given to me by a friend. I wasn't a huge fan of the style, but didn't really dis-like it either.... this beer has swayed me. It was fantastic! given it to a couple hop-head friends and they've all loved it.

the second-runnings beer would make a great blonde ale, esp if steeped with some crystal malt after taking the final runnings. I over hopped it (6 oz of willamette), and it just killed it... tastes like grass clippings.
