Batch Size (Gallons): 12
Original Gravity: 1.086
Final Gravity: 1.021
IBU: 87.9
Boiling Time (Minutes): 60
Color: 9.33
Primary Fermentation (# of Days & Temp): 7 @ 65F
Additional Fermentation: no
Secondary Fermentation (# of Days & Temp): 10 @ 65F
Tasting Notes: TBD

Hey everyone, first time posting a recipe. Im working on re-working a IIPA recipe that I have been brewing for a few years. The current recipe is a bit too dark for my liking and too sweet for a IIPA. I love it, but i think I am going to categorize it as a strong ale.

The recipe listed below is my attempt at getting a cleaner, hoppier option. I feel pretty comfortable with most of the malt bill, its the hops that I am unsure of and I am looking for feedback. Second, I am having a difficult time getting the final gravity to be lower than 1.020 - I think I would like it to be closer to 1.015. What does everyone think?

Ingredients:
32 lb 2-Row Brewers Malt
1 lb Victory® Malt
1 lb Vienna Malt
1.9 lb Cara-Pils® Malt
1 lb Crystal Malt 20°L
2 oz Chinook (13.0%) - added during boil, boiled 60 min
2.75 oz Hallertau (4.5%) - added during boil, boiled 30 min
2 oz Cascade (5.5%) - added during boil, boiled 25 min
2 oz Hallertau (4.5%) - added during boil, boiled 15 min
2 oz Cascade (5.5%) - added during boil, boiled 15 min
2 oz Centennial (10.0%) - added during boil, boiled 5 min
2 oz Goldings (5.0%) - added during boil, boiled 2 min
3 oz Cascade (5.5%) - added dry to secondary fermenter

Loose the carapils, you are just adding more body.
mash low, like 148-150° for a drier beer. Maybe change 10% of your 2row to table sugar. Those changes will really drop your fg and give you less thickness/mouthfeel.

Just my opinion, but I don't think you will get much from your 30 and 25 min additions. Do a 60 then split your remaining boil hops to 15, 10, 5 and flameout for more hop aroma
