Yeast Starter: Hydrate

Original Gravity: 1.076
Final Gravity: 1.015
IBU: ~80
Boiling Time (Minutes): 60
Color: 16
Primary Fermentation (# of Days & Temp): 7 days @ 68°F
Additional Fermentation: bottle conditioned
Secondary Fermentation (# of Days & Temp): 6 days @ 68°F
Tasting Notes: Mmmmmm

AG Grain Bill
10# 2-row
2# Honey Malt
1# Crystal L60
0.5# Carapils
1# Honey

Extract Grain Bill
6.6# Light LME
1# Light DME
2# Honey Malt
1# Crystal L60
0.5# Carapils
1# Honey

Hops - all pellets
1.0 oz. Chinook (13%) @ 60
0.5 oz. Simcoe (13%) @ 20
1.0 oz. Centennial (11%) @ 15
0.5 oz. Simcoe (13%) @ 10
1.0 oz. Simcoe (13%) @ 5
1.0 oz. Amarillo (8%) @ 0
1.0 oz. Amarillo (8%) dry in secondary

1 tsp Irish Moss @ 15

0.75 cup Corn Sugar for bottling

I held the LME until the 15 minute mark of the boil to get the max out of my bittering hops. I also added the honey at flame out so I could retain as much of the flavor and aroma as possible.

The nose on this is amazing. Orange/Tangerine and floral come through with a hint of honey to back it up. The flavor is citrus and spice, but not too sweet and just a hint of alcohol warmth. And the honey comes back in the finish.

This is my house IPA and is a great brew for a big beer with a quick turn around. I'm not very patient and love a beer I can drink young. I usually pop the first one a week after bottling.
