I've never used Wheat Extract before, so I can't really say. I would imagine the flavor profile would be a bit sweeter, but probably not too noticeable as long as the yeast strain was clean.

Will a partial boil work for this, or not recommended?

I think a partial boil would work fine, but make sure you change your calculations to match the partial boil. I can imagine the ingredient weights will be much different with a 2 or 3 gallon boil.

I'd be going for a 3-gallon boil... can you explain exactly what I'd have to calculate? Sorry, I'm still kind of a noob at this.
