Default Ghost Pepper IPA

Recipe Type: Extract
Yeast: Safale 05
Yeast Starter: None
Batch Size (Gallons): 5
Original Gravity: 1.084
Final Gravity: 1.013
IBU: 43.5
Boiling Time (Minutes): 60
Color: 8.5
Primary Fermentation (# of Days & Temp): 14 Days (70 degrees)
Additional Fermentation: 10 days in bottles -- good to go
Tasting Notes: Spicy...malt and bitter work well together and has a nice, clean finish.

This has been a work in progress since I first started playing with this recipe last August.

It doesn't resemble the beginning product at al that I started with but I'm super happy with the result. It may seem fairly basic and limited in the number of ingredients but I've had rave reviews from many people.

1 Can DME (3.3 pounds) - Muntons
5 pounds dark DME - Muntons
60 minute boil

2 oz. Centennial (8.8%) - pellets
60 minute boil

1 oz. Cascade - pellets
15 minute boil

5 dried ghost peppers
15 minute boil
(If you aren't into spicy, you will want to reduce the number)

Due to the high OG, I've had better luck pitching 2 packets of 05.

This is the first recipe I've posted. I'd love some reviews or some suggestions. I feel pretty confident in what I have but we all have room to improve.

This was in a 5 gallon pot...boil after ingredients added had the level slightly over 4 gallons during the boil.

Added almost 2 gallons to top off.

Color is actually 13.7 -- 8.5 was from the previous batch that had both light and dark ME's.
