Mash for 60 minutes at 148. I racked to secondary after 2 weeks and then added the 'four horsemen' and oak chips. The use of first wort hopping is really important here. It seems to truly mellow out the big bite a high IBU IPA tends to hit you with. The bittering is there, but it comes at the finish to scrub the palate for the next sip.

Also, 5lbs of caramel 10 may seem like a lot, but it is a low crystal malt and it serves to pump the malt up enough to put it in balance. I was planning on experimenting with this component, but I love this brew the way it is, and as they say -if it ain't broke...
