Designed this to be a big PNW IIPA and it fully delivers. Bittering is very smooth and lacks the bite of most IIPAs. I'm not a fan of IIPAs that strip your taste buds after 2 beers. Flavor/aroma is strong citrus and pine with earthiness from the Northern Brewer. The Summit and Simcoe bring through softer citrus against the grapefruit. You might have to modify the hop amounts based on your AAs. Summit for me has been at 15AA or below so this recipe is based on that.

Lastly a Hop spider or hop bag is HIGHLY recommended for this one.

15# Two row
2# Munich
1# C20

Single infusion mash (1.25 qts./lb.) for 80 minutes @ 150F
I use Bobby_M's Double batch sparge
Boil size: 8 Gallons (accounting for absorption, boil off, dead space with my system)

1.25oz. Northern Brewer 8.5% (FWH)

.5oz. Summit 15.5% (60)

1.25oz. Simcoe 13% (10)
1.25oz. Summit 15.5% (10)
.75oz. Amarillo 7% (10)
.75oz. Cascade 5.5% (10)

1.25oz. Simcoe 13% (1)
1.25oz. Summit 15.5% (1)
.75oz. Amarillo 7% (1)
.75oz. Cascade 5.5% (1)

Dry hop with .5oz each of Simcoe, Summit, Amarillo, Cascade for 7 days prior to bottling.

Primary for 4 weeks at 67f with dry hop added at third week.
