Weird! I guess "Bloody IRA" means something different to folks who didn't grow up in the UK... Looks a really nice beer. Did you use standard chocolate malt, or pale chocolate malt? I've heard Jamil raving about pale chocolate, but I've never used it.

I meant it as a play on words, and I assumed that most of the people that picked up on it would be on your side of the pond. It's got a slightly Irish ale malt base. I used the regular chocalate, the pale chocolate doesn't promote the deep ruby color as well.

You say to do a 90 min mash with the hops, but your mash profile says 60 minutes??

The software program usually counts/calculates bittering from FWH hops in terms of the boil time which is 90min. My understanding of FWH is that you put them in the kettle first and let them steep in your mash runnings. I don't think you add them to the mash tun. First wort hopping - Home Brewing Wiki |
