YEAST
PacMan Yeast Harvested from two bottles of Rogue Stout and put into a .95l starter

HOPS (Columbus Leaf and Simcoe Pellet)
.25oz Simcoe First Wort
1oz Columbus @ 60min
.25oz Simcoe @ 30min
.25oz Simcoe @ 15min
.25oz Simcoe @ 5 min
1oz Simcoe @Flameout
Dry hop with 1oz Simcoe in secondary

ADDITIONAL
1tsp Gypsum to bring my PH to 5.2 in the mash
1tsp Irish Moss @ 10min of the boil


Mash @152 for 75 min and fly sparge @170

This is a simple IPA but tastes great if you like Simcoe hops and a high IBU IPA. I let all my mash and sparge water sit out the night before I brew to let some of the chlorine evaporate and then treat it with gypsum at a 1/4tsp per gallon ratio. This brings my PH to almost exactly 5.2. Let me know what you think.
