Add .5 lb of lactose at beginning of boil, .5 lbs at 5 min.
Nottingham was rehydrated.

I just pulled the first two pints of this last night. The lactose is there, but it's certainly not overpowering. It's a bit sweeter than Sam Adams Cream Stout, but also much more full bodied with detectable chocolate and roasted notes. It's almost 9% alcohol, but you certainly can't tell by drinking it.

You know, I've been sitting on a few pounds of lactose powder for awhile now, and I think that a sweet stout is exactly the way to go. Always wanted to try one.

It's not as sweet as you might think. It's certainly not like drinking sugar, milk or cream. There's a hint of sweetness there but it's there with everything else.

The key is to not overdo it and overwhelm the rest of the palate. I think that this recipe was pretty successfull in doing that.

Any chance of an extract version of this recipe? I have yet to take the plunge into AG and I'm just now starting to try out BeerSmith (in case it can automatically convert the recipe into extract.... if that's even possible...)

I hit convert in BeerSmith and this is what it spit out. 13# of LME and steep the rest of the grains.

Did you actually finish at 1.022 even with the lactose? My similarly sized 08-08-08 Stout finished about 1.030 with no adjuncts.
I think I may have to consider a Sweet Stout in the near future. I'll probably target a lower gravity but your grain bill looks good.

IIRC, this finished out at 1.026 - 1.028. I know that it was under 1.030.

Any clean, non-phenolic yeast would work. S-05, WLP001, WLP051 and Wyeast 1056 are all options.
