7.5 lbs American 2-row malted barley
1.75 lb 60L crystal malt
0.75 lb. Cara-Pils malt
0.75 lb. Special Roast malt
0.125 lb Chocolate malt
0.5 oz Cluster hop pellets (90 min)
0.33 0z Willamette hop pellts (30 min)
1.0 oz. Cascade hop pellets (1 min)

Mash at 154 F for 90 mins.

For extract, sub 5.5 lbs light dry malt extract for 2-row. Do not use Cara-Pils

I just brewed the extract version of this recipe yesterday, did a 4-gallon boil and cut the cascade by 1/4oz. Everything looked great, we'll see soon enough how it turns out.

It's my pleasure Wayne. I let it sit in the primary for almost 4 weeks and bottled it last night. I gave it taste and it was fantastic! It had some really nice, deep malty flavors with some chocolate tones, and a worthy hop presence. I will let you know how they taste after they're done conditioning.

I brewed the all grain version of this last night. I live in an apartment and cooked it on the stove top. I'm not sure what happened or where I messed up but I only got 3.5 gallons in my fermenter. Ay suggestions?

My gravity reading came out at 1.059

I sparged 4.5 gallons of water through the top of my mash tun.

What was your OG? How much did you sparge with?

If the OG is high enough, you can add boiled and cooled water to the fermenter to make up volume.

Next time run some more hot water through your grain , and boil to make up volume. Buy at 1.059, you could definitely add sterile water.

I added 1 gallon of sterile water when I got home from work yesterday. It had been in the fermenter for almost 24 hours when I did it. Hope that doesn't screw things up.

The recipe on top was what I used to give out to homebrewers when I worked at the brewpub in Vail. I did not go into detail about mash volumes, temps etc.

Here is the same recipe reworked a bit in BeerSmith to give water volumes and temps.

This is revised to fit my current homebrew system, my way of brewing and current availability of hops. You should adjust the amounts and volumes to fit your system.
