Brewing this guy up this weekend. Anyone use grits with it? Ive used flaked maize exclusively until now so this is somewhat experimental, although it will probably taste the same.

I brewed this three weeks ago with a few tweaks. Mostly in the hopping and the yeast...

Recipe Specs

Batch Size (G): 3.5
Original Gravity (OG): 1.050
Final Gravity (FG): 1.012
Alcohol by Volume (ABV): 5.17 %
Colour (SRM): 14.8
Bitterness (IBU): 29.2

Grain Bill
----------------
4.000 lb American 6-Row (69.57%)
1.500 lb Flaked Corn (26.09%)
0.125 lb Black Malt (2.17%)
0.125 lb Crystal 120 (2.17%)

Hop Bill
----------------
0.50 oz Cluster Pellet (7.5% Alpha) @ 60 Minutes (Boil) (0.1 oz/Gal)
0.50 oz Cluster Pellet (7.5% Alpha) @ 10 Minutes (Boil) (0.1 oz/Gal)


Single step Infusion at 152°F for 55 Minutes.
Fermented at 68°F with WLP008 - East Coast Ale



I pulled a sample tonight and the beer tasted great. I actually really like the Cluster character and the Flaked Maize adds a nice grainy sweetness. This really is an awesome beer style and I'll definitely be brewing this again.

Glad you liked it! The tweaks look good as well. I tried one with a .25oz of cluster around 10min left in the boil and didn't like it as much, but I really didn't get much hop character, and it could have been another factor as well. I'll have to try .5oz some time. I am currently drinking some. Cheers!

Clears up nicely with just some irish moss. Also has some nice lacing as you can see.

I saw that any american ale yeast works well. Has it ever been tried with a lager yeast at ale temps like a steam beer? I just thought that might yeild some nice clean/crisp results too. Not to style that way then I suppose.

Either way, it's on the to-do list for sure.

I considered trying Cali-Lager yeast but never tried it. Someone mentioned they were going to try a fairly clean lager yeast. I'm sure something like American Lager would be good in it, however, I don't think the "steam beer" approach would work too well, in that you would probably get some fruity notes in it. Personally I don't care for them in this beer, which I why I ferment cool.

The 1st one I did of this recipe, I kegged a few days ago and took out to the garage to condition I did that one with White Labs Cream Ale Blend. I'm mashing one now I'm gonna do with Safale 05. Should be able to do a side by side tasting in a while. I'm thinking the While Labs Cream blend might be my huckleberry. I like that yeast with other styles. It's a blend of low temp ale and high temp lager yeasts. Might be nice yeast for this style of beer...

I just did this recipe as well, but made a few modifications. I typically only get about 65% efficiency, so I upper the base malt a little bit, but than got higher than expected efficiency (ha!) and decided to up the bitterness a few IBUs to make up for it. Also, since I bought all the ingredients for this batch about 6 months ago and simply had no time or energy to brew in that time (damn you retail) I went out and bought new hops that were a little higher in the alpha.

As an experiment I picked up the Whitelabs WLP090. It seems to be a very clean yeast with very little ester production, and am thinking of doing an IPA, DIPA, or maybe a Cascade IPA on the yeast cake so that I can really highlight the flavor of those hops.


0.50 lb Rice Hulls (0.0 SRM)
7.50 lb Pale Malt (2 Row) US (2.0 SRM)
2.00 lb Corn, Flaked (1.3 SRM)
0.25 lb Caramel/Crystal Malt -120L (120.0 SRM)
0.13 lb Black (Patent) Malt (500.0 SRM)
0.65 oz Galena [13.00 %] (60 min)
1 Pkgs Whitelabs San Diego Super Yeast (WLP090)

SG: 1.053 IBU:30.1

I'll let you know how it turns out.
