How is this? I've been thinking of doing a Amarillo SMaSH with Maris Otter and would do something similar.

Sorry, I didn't see this until just now. So far, It is one of the best beers I have brewed to date. It is a very clean great tasting pale ale. Kind of reminds me of Sierra Nevada sans cascades and slightly more biscuty.

Have you tried any variations on this? I've brewed an MO/Centennial SmaSH with about 3 lbs of the MO toasted to add some deeper complexity.

Not yet. I split this batch in half. One half with good ole Wyeast 1056. I did the other half with Wyeast Scottish Ale Yeast on a whim. It turned out pretty bad.
I was thinking about toasting, but never got around to it. I'll probably keep it like this for a while. Its something I enjoy as well as my more BMC inclined friends.

It was good. I also dryhopped with two ounces of amarillo for a week cold. If I did this same recipe again I would cut back the IBU a little. A good beer but I think that centennial melds better with maris otter.

Do you think it would have been better if you used 2-row?
