Default All-Grain - Citralicious Pale Ale

Recipe Type: All Grain
Yeast: WLP001
Yeast Starter: Yes
Batch Size (Gallons): 10
Original Gravity: 1.058
Final Gravity: 1.011
IBU: 51
Boiling Time (Minutes): 75
Color: 7.6
Primary Fermentation (# of Days & Temp): 20
Tasting Notes: See below

I brought a 5gal keg of this to Yooper's Brew Day and left with just over a gallon remaining in the keg. Maybe Odawg, Yooper, Homercidal, lschiavo or HenryHill will chime in with some feedback.

You can call this either a big APA or a small IPA with its 6% abv and 51 IBU's. Nice and hoppy, but not over the top. I have really enjoyed the results of pairing Citra with Simcoe.

Oh, we loved that beer! I really like the balance it had, and found it very much like a hoppy APA. I think the simcoe/citra combo is awesome! I like the backbone that beer has- it's got enough malt flavor to really stand up to the hops and provide a smooth beer.

I'm a big fan!

I love citra hops. So, I decided to brew this a while back, following the recipe exactly. It is a VERY good beer. I kegged it at four weeks and let it carb slowly over the next 10 days or so. It was good then, but a bit bitter. After another week in the keg, the bitterness has mellowed and it is fan-freaking-tastic!!! The tropical fruit flavors from the citra are front and center with a nice malt background to balance it out. I will definitely brew this again. Though next time, I might add a few oz of Carafoam to help the head retention a bit. Thanks for the recipe.
