Default Blonde Ordinary Bitter

Tasting Notes: A mix of American and English hops, a touch of nutty character. Highly quaffable.

This is an ordinary bitter inspired by a few different cask ales I had in London. There seemed to be a sub-style of bitter that was extra blonde and used a touch of American hops that I found myself gravitating towards so I set out to make something along those lines. I find the Thames Valley yeast strain to be really pleasant, accentuating hop flavors while letting the nuttiness of the grain shine through. It's the perfect fit for this type of bitter.

7 lbs 8.0 oz - Pale Malt, Golden Promise (3.0 SRM) - 96.8 %
4.0 oz - Wheat Malt, Ger (2.0 SRM) - 3.2 %
0.60 oz Simcoe [12.20 %] - Boil 60.0 min - 25.8 IBUs
1.00 oz - Goldings, East Kent [5.00 %] - Boil 0min
Thames Valley Ale (Wyeast Labs #1275)

Dry Hop:
0.50 oz - Goldings, East Kent [5.00 %] - Dry Hop
0.50 oz - Simcoe [10.00 %] - Dry Hop


Mash temp: 155*F

For BIAB (I often do BIAB with this recipe since the grain bill is small and easy to handle):
- Mash with 5 gal @ 163*F
- 'sparge' with 2.15gal (7.43 total)

You'll definitely want to drink this one young!
