strike 8.3 gal @142 W/ 5.2 PH stabalizer
mash@122 for15 - 20 min
first decoction pull 40 % (8# dry) of the mash raise sssslowly to boil and hold for 30 min
slowly add back to mash and raise to 134 settle for 10 min
second decoction pull 50 % of mash and slowly raise to boil hold for 20 min
return to mash and hold at 154 for 60 min
( its a LOOOONG mash but welll worth it)
sparge with 9 gal of H2O @ 168 deg F
collect 14 gal
2.5 OZ Pearl pellet hops 7.7 AAU for 23% utilization 50 min= 31.5 IBU
2 OZ cascade whole hops 7.8 AAU for 6% utilization 7 min=6 IBU
total 37.5 IBU
