American Saaz Hops 1 oz 60 mins, Czech Saaz 2 oz at 10 mins
Begin with 2.5 gallons of water.
Steep 1 lb each of American Red Wheat and American Vienna grains for 20 mins at 158 degrees.
Add 3 lbs Extra Light DME Add American Saaz hops.
Boil until 10 minutes to go - Add Czech Saaz Hops.
At flame out, add remaining 3 lbs of Extra Light DME and 1 lb Wheat DME.
Let set 10 minutes to sanitize DME late addition.
Chill rapidly as possible to 70 degrees, and move to fermenter. Top off to 6 gallons. Vigorously agitate, and pitch yeast.
Ferment at 68 degress for 3 weeks ( 21 days ).
( A BLOW OFF TUBE IS A GOOD IDEA AS THIS VOLUME IS ABOUT ALL THE BUCKET CAN STAND ).
Rack to secondary and gelatin fine for 2 days. Then Prime with 5.25 oz corn sugar , and bottle.
Will have a hazy appearance, and an interesting but crisp taste for an ale.
( The next time I brew it, I am going to try some maltodextrine to "beef up" the mouthfell a little bit. )
