Default All-Grain - Moss Hollow Münchner Hell

Yeast: WLP 838 Southern German Lager
Yeast Starter: 2L + 8oz LME

Final Gravity: 1.012
IBU: 17.8
Boiling Time (Minutes): 90
Color: 4.1
Primary Fermentation (# of Days & Temp): 14 days @ 50º-52ºF
Secondary Fermentation (# of Days & Temp): ~45 Days @ 40ºF
Tasting Notes: Clean profile with subtle candied fruit and plenty of melanoidin malt flavor.

Brewed this on 5/18. Just kegged 'er on Friday, took a first carbonated sip, and was sold. My best lager to date, easily. So crisp, with a great malt character from the decoction. I ran out of Melanoidin malt so I did the final step with a decoction. Between the decoction melanoidins and the touch of Victory malt, it's perfect. The 838 gives it a nice candied fruit note.
