Default What's for Easter Dinner?

My folks came up and I was going to make ham but they asked for brisket on the smoker. I have a 13 and 12 pounder in there smoking with applewood that should be ready to come off soon. Will wrap it in tinfoil and put it in the cooler to rest for a few hours. Sending one whole one home with them Monday.
Was thinking Coleslaw, Some sort of oven potato dish and a vege of some sort.

Just the regular here. Ham, Mashed potatoes, deviled eggs, veggise, bread, pie and more snacks than anyone will ever eat.

I've been charged with bringing an appetizer to a family function. Haven't given it much thought yet. Any suggestions?
