Beans!

Pinto Beans

1 lb. Dry Pinto Beans -
1 Smithfield Ham Steak, trimmed, deboned, and cubed.
4 Tbs. Fiesta Pinto Bean Seasoning
1 Tbs. McCormicks Seasoning Salt
1 medium onion chopped up
2 jalapeno peppers
1/2 bunch cilantro

Sort beans, look for pebbles.
Soak overnight and rinse before cooking.
Cover beans with water up to 1 inch. Bring to a boil.
Roiling boil for 1 hour.

Then add bean seasoning, McCormick's, onion, ham and float jalapenos.

Add cilantro last 15 minutes of cook.

I almost always do slaw and either potato salad or smoked beans with porksteak and onions etc.
In the summer either some smoked stuffed cabbage or stuffed vidalias too.
