Default Southwest Chicken Fingers

Two chicken breasts, sliced into strips
1/2 C bread crumbs
1/2 C flour
1 egg
2 Tbsp milk or cream
Fresh ground pepper

Mix the bread crumbs and flour thoroughly, and add fresh ground pepper to taste (1/4 to 1/2 tsp...or more!). Beat the egg and milk/cream together in a separate bowl. Dredge the chicken in the egg mixture, then coat with the bread crumb mixture. Repeat the egg and flour act to double coat the chicken if you like it extra crispy. Deep fry in peanut oil at 375 degrees until nicely browned (about 6-9 minutes). Meanwhile, make the sauce:

1/4 C honey
1 Tbsp spicy mustard
1 tsp vinegar
1/2 tsp chili powder
Fresh ground pepper
Pinch salt

Whisk all ingredients together in a small bowl. Add a little cayenne or some chopped chipotle peppers for an extra kick.

Serves two. Pair with a spicy IPA.
