Default Smoking Tomorrow - Bonless Pork Shoulder

I picked up a boneless pork shoulder at the store today and will get up and smoke it all day tomorrow. I'm thinking about marinating it overnight - any ideas?

Should I do it? If so, what might be good?

I have my stout, dunkelweiss, and apfelwein as possible bases. I do have fresh apples as well which I may put in the water dish.

Any other ideas?

I have never marinated them but I spray them with a mixture of Jack D. and apple juice 50%/50% then dry rub them the night before.

1-2 bottles of stout
1/4 cup honey mustard
1/4 cup oil
1 tsp salt (pref coarse)
1 tsp pepper (pref fresh ground)
1 medium onion
1/2 finely chopped red pepper
4 cloves garlic chopped fine
1/8 tsp ginger or 2-3 slices fresh
1 Tbls paprika

mix together and marinate overnight


or

spray this on while cooking

2cups apple cider
3/4 cup cider vinegar
1/4 cup bourbon
1/4 cup worcestershire sauce
1/4 cup lemon juice
1/2 tsp salt
1/4 tsp pepper

I also like to tie boneless shoulders up with butcher's twine so that it doesn't come apart.

Rub it in yellow mustard, then sprinkle you favorite rub on it liberally. Let it sit overnight, then smoke it. I do mine in Butt Rub!

I like Durkee's rub. I have only found it at Walmart. It has a nice spice and lots of brown sugar.
